1/2 red onion, thinly sliced

1/2 red pepper, thinly sliced

1/4 tsp smoked paprika

1/4 tsp ground cumin

3 eggs

1/4 tsp salt

2 tbsp parsley leaves, coarsely chopped, plus extra to serve

Heat oil in a frypan over a medium-low heat and cook onion, red pepper, paprika and cumin until onion is soft but not brown (about 10 minutes).

Season to taste with salt and black pepper and garnish with green chilli, if desired, and extra herbs.
