Perfect Mash

For creamy, fluffy mash you need a starchy potato (rather than a waxy one). Mash the potato finely or put it through a ricer to break it up finely before adding butter or milk etc. Whatever you do, don't use a food processor, as you'll end up with gluey potatoes!

Ingredients

7-8 medium potatoes, peeled and cut into chunks

2-3 tbsp butter

1/4 cup hot milk, or cream

salt and freshly ground black pepper

Method

STEP 1

Boil potatoes in salted water until tender.

Drain thoroughly.

Use a potato masher or fork to mash with butter and hot milk or cream, mashing until creamy and smooth. (Do not use a food processor).

Season to taste.

If not using at once, cover and chill.

TIPS

Cooked mash can be reheated for 5 minutes in a microwave.

Add a little more hot milk if needed.

VARIATION

Replace half the potatoes with peeled, chopped kumara (sweet potato).
