Pasta with Spinach & Feta
This simple fresh pasta is an effortless mid-week meal. We recommend using a high quality extra-virgin olive oil for this recipe.
Quick & Easy
400g dried pasta
2 tbsp extra-virgin olive oil
1 large onion, finely diced
2 tsp crushed garlic
1 large bunch spinach, washed, stalks removed, finely chopped
200g feta cheese, crumbled
1/4 cup walnuts, toasted (optional)
freshly ground black pepper, to taste
a pinch of finely grated nutmeg
Cook the pasta according to manufacturer’s instructions.
While the pasta cooks, heat the oil in a pan and cook the onion until soft.
Add the garlic and sizzle for a few seconds. Add the spinach to the pan and cook a further minute.
Add the feta and walnuts, if using, and season with pepper and nutmeg.
Toss through the cooked pasta. Sprinkle with plenty of freshly ground black pepper and serve immediately.
Use 100g crumbled blue cheese instead of feta.
