Lime and Sesame Beef Stir-fry

This is a great one-pot dinner to make with store-cupboard noodles and whatever fresh ingredients you have to hand. We like it with beef and broccoli. Depending on how hungry you are, you could add another bundle of noodles to bulk it out.

Ingredients

250-300 g lean beef, such as fillet or sirloin steak, sliced super-thinly across the grain

1 lime, finely grated zest of

2 cloves garlic, thinly sliced

1 tbsp soy sauce, or tamari

1 tsp sesame oil

190-270 g dried udon or soba noodles, cooked according to packet instructions

1 head broccoli, cut into small florets, stem peeled

1 tbsp neutral oil

1 tbsp oyster sauce

2 tbsp water

1 head bok choy, leaves separated

a handful of snow peas

1 spring onion, thinly sliced

2 tbsp toasted sesame seeds

2 tbsp lime juice

Method

STEP 1

Mix beef with lime zest, garlic, soy sauce and sesame oil.

Leave to stand on the bench while you cook the noodles.

Add broccoli to the noodles in the last 2 minutes of cooking.

Tip into a colander and cool under cold water; drain well.

STEP 2

Heat oil in a wok or large frypan and stir-fry meat over high heat for 1 minute.

Add oyster sauce, water, bok choy and snow peas and stir-fry for another minute.

STEP 3

Add drained noodles and broccoli, spring onion and sesame seeds.

Toss over high heat for 1 minute; mix in lime juice.

Serve at once.
