Green Summer Sauce

This fabulous sauce goes well with just about anything. We love to keep a big jar of it in the fridge to quickly toss through a salad, spoon over a side of salmon or some chicken, drizzle over a steak, slather on burgers and sandwiches, or have with hummus and crackers. (Pictured on the right in this image.)

makes 1 3/4 cups

3 big handfuls parsley, or rocket/arugula

2 cloves garlic, peeled

a bunch of chives, or the green ends of 2 spring onions/scallions

1 1/4 cups neutral oil

2 tbsp capers

1 tbsp Dijon mustard

3/4 tsp salt


Place all ingredients in a food processor and blitz until smooth.

It will keep for 4–5 days in the fridge, or freeze in iceblock moulds.
