Fifteen-Minute Burritos

Easy, delicious, and bound to be a hit with the whole family. The spicy beef mixture is also great as a filling for baked potatoes, over nachos or served with rice.

Ingredients

2 tbsp neutral oil

500g / 1lb beef mince

1 large onion, thinly sliced

1 x 400g / 14oz can crushed tomatoes, or cherry tomatoes

1 x 400g / 14oz can kidney beans, or black beans, drained

2 cloves garlic, crushed

1 tbsp chipotles in adobo sauce, chopped

2 tsp ground cumin

1 tsp dried oregano

1 tsp salt

freshly ground black pepper, to taste

TO SERVE

4 large soft flour tortillas, warmed

vegetables, of your choice, such as shredded lettuce or cabbage, grated carrots, spring onions/scallions, avocado slices and coriander/cilantro leaves

dressings, of your choice, such as sour cream, guacamole, tomato salsa or relish

Method

Heat oil in a large, heavy-based frypan or pot and cook beef and onion over a high heat, breaking up the beef with the back of a spoon until browned (6-8 minutes).

Stir in remaining ingredients, bring to a simmer, then cover and simmer over a low heat for 2-3 minutes.

To serve, divide beef mixture between tortillas, arranging in a line down the centre and leaving a little space along the bottom.

Top with salad fixings and dressings, then fold up the bottom and roll to create a burrito.
