Easy Oven Fries

The brilliant thing about homemade oven fries is that there is very little fat or oil needed to cook them to get a crunchy tasty result. Pre-cooking the potatoes means you can get ahead of the game and have them ready to pop into the oven to crisp 40 minutes before serving.

Ingredients

8 medium/large floury potatoes, such as agria

3 tbsp rice flour or plain flour

3 tbsp extra-virgin olive oil

1 tsp flaky sea salt

freshly ground black pepper

Method

STEP 1

Preheat oven to 200°C (400°F).

Line a shallow oven dish with baking paper for easy clean-up.

STEP 2

Scrub the potatoes and then boil in salted water for 10 minutes.

Drain and cool.

Cut into chips or wedges.

Transfer to a large bowl.

STEP 3

Add the flour, olive oil, salt and pepper and toss to combine evenly.

Spread out to a single layer on prepared dish (you may need to use two).

Bake until crispy and golden (40-45 minutes).

STEP 4

Note: We've used rice flour here to make these extra crispy, but you can also use plain flour.
