Christmas Fruit Mince
Make this Christmas Fruit Mince at least 24 hours ahead of when it is needed. It will keep for months in a jar in the fridge and improves with age.
makes about 1kg
300 g currants
150 g good-quality raisins, chopped
150 g cranberries
3 apples, peeled and grated
1 packed cup soft brown sugar
1/2 tsp ground cloves
1 tsp ground allspice
1 lemon, finely grated zest and juice of
1/2 cup brandy
3/4 cup hazelnuts or pine nuts, toasted and chopped
Place all ingredients except the nuts in a large bowl and mix to combine.
Transfer to a jar and store in the fridge until needed.
When ready to use, stir in the hazelnuts or pine nuts.
