Carol's Whitebait Fritters

When we were filming Annabel's first TV series, The Free Range Cook, we met up with a couple of whitebaiters and learnt a few tricks of the trade. Carol kindly agreed to share her secret recipe for whitebait fritters. It's lovely and light, and without any egg yolk, you can really taste the whitebait.

Ingredients

2 egg whites, beaten to soft peaks

1/2 tsp salt

1 tsp rice flour or plain flour, heaped

1 cup fresh whitebait

1 tbsp neutral oil

1 tbsp butter

lemon cheeks, to serve

Method

STEP 1

Whisk egg whites to form peaks.

Add salt, flour and whitebait and gently fold to combine evenly.

STEP 2

Heat the oil and butter and cook heaped dessert spoonfuls of the mixture over medium heat until golden and puffy, adding extra oil and butter to pan between batches as needed.

Serve with a squeeze of fresh lemon.

NOTE

You can use plain flour in place of rice flour if desired.
