Baked Lemongrass and Chilli Chicken
This is our go-to meal when time is tight. Cook some rice and vegetables or throw together a salad while it's in the oven and you'll be eating in half an hour.

Ingredients
6-8 single chicken breasts, boneless, skin on
3 tsp finely grated lemongrass
1/2 cup Thai sweet chilli sauce
1/4 cup water
2 tbsp fish sauce
2 limes, finely grated zest of, or 2 lime leaves, finely chopped
2 tbsp lime juice
2 cloves garlic, crushed
Method
STEP 1
Preheat oven to 200°C.
Place chicken breasts skin-side up in a shallow baking dish.
Combine all other ingredients and pour over the chicken.
Bake until the chicken is cooked through and golden (about 30 minutes).
To check whether it is done, insert a skewer into the thickest part. If the juices run clear, it is cooked.
If they are pink, return it to the oven and cook a little longer before testing again.
Serve with jasmine rice and a green salad or vegetables.
