Keeping things Old School

This year, we're celebrating our first family Christmas together in 7 years. On the day, we'll be keeping things old-school with a classic Roast Turkey, Glazed Ham, Quinoa Stuffing, Baby Potatoes, Fresh Corn and a Paradise Salad.

We're also going to have some fab modern appetizers from Summer at Home — Anchovy Crostini and a Grilled Squid and Fennel Salad. For dessert, our Heaven Cake from Together. We would love for you to join us in our feast! See below for the recipes. A very Meri Kirihimete to you all, however you are celebrating.

Grilled Squid & Fennel Salad

Whole squid is inexpensive and such a great source of quality protein. Sicilian Castelvetrano olives are really what make this salad—they are buttery, meaty, and incredibly delicious. When buying olives, if you can, choose ones that have their stones in as they are less likely to be mushy and have a better depth of flavour.

PRODUCE

1 head garlic, 3 red onions, 3 brown onions, 2 bags of lemons, 1 orange, 4 tomatoes, 2 small fennel bulbs, 1 1/2 cups corn, 3 baby cos, 2 bunches asparagus, 6 radishes, 3 avocados, 1kg baby potatoes, 1 packed cup cooked mashed potato, 1/4 pumpkin, 2 kūmara, 3 parsnips, 300g green beans, 2 red peppers, 1 bunch spring onions, 2 cups basil, 1 bunch dill, 1 bunch mint, 1 bunch parsley, 1 bag of rocket, 3 cups mixed fresh berries, 500g cherries

PROTEIN

4kg whole turkey, 1 whole bone-in ham, 13 eggs, 1 x jar anchovies, 2 whole squid, cream, yoghurt

PANTRY

neutral oil such as grapeseed, extra-virgin olive oil, butter, sugar, salt, flaky sea salt, peppercorns, white wine vinegar, apple cider vinegar, Dijon, honey, Worcestershire sauce, smoked paprika, chilli flakes, fresh rosemary, bay leaves, allspice, whole cloves, ground cloves, cinnamon, star anise, dried apricots, pine nuts, slivered almonds, vanilla extract, self-raising flour, high-grade flour, cornflour, quinoa, instant dry yeast

OTHER

1 high-quality baguette, 1 jar roasted red peppers, 1 x 400g can butter beans, 12 green Sicilian olives, cornichons, orange juice
